Lilikoi butter is often made for friends and gifts. The dear Aunties of Molokai make it from a variety of passion fruit called lilikoi, and nothing like it is found in stores. It’s often served with saloon pilot crackers, also made in Hawaii. I’m not up on the history of crackers, but I think these are quite similar to the hardtack ancient mariners gnawed on. It’s a sturdy, long lived cracker. I opened a sealed pail that had been stored for 10 years and they were just fine. The most exquisite, rare jam on a nearly extinct cracker with fresh papaya made a picture perfect breakfast and subject.
